Not so Raw Curried Quinoa…That Rhymes! Kinda..

Okay, this one isn’t raw.  But its healthy, loaded with veggies, tasty and pretty easy; all good things, right!?  I basically used a recipe that I found online on Vegweb.com (Thanks Bohemian_Vegan!)  But I made some changes and came up with my own little rendition.  Hope all you mostly/high raw-ers enjoy this one!

Curried Quinoa with Sauteed Mushrooms and Onions

1 cup quinoa

2 cups water

1/4 cup raisins

1/2 cup chopped tomatoes

2 carrots, grated

1/2 zucchini, finely chopped

1/2 green bell pepper, finely chopped

3 teaspoons curry powder

1 teaspoon chili powder

1/2 teaspoon nutmeg

2 tablespoons cilantro

celtic sea salt or Braggs to taste

Baby portobello mushrooms, chopped

1/2 white onion, thinly sliced

1 clove garlic, minced

red wine vinegar

maple syrup

Olive oil

1. Mix mushrooms with garlic in a bowl and drizzle with red wine vinegar and maple syrup.  Generous drizzle is good, don’t douse your ’shrooms!  Set aside.

2.  Rinse off your quinoa!  Bring the quinoa and water to a boil and let boil about 15 minutes until all the water is absorbed.

2. While quinoa is cooking, heat olive oil in a medium sized pan and saute your onions for a couple of minutes.  Add the ’shrooms and garlic and saute for a couple more minutes until soft and slightly browned.

3. When quinoa is cooked, turn off heat but leave on the same burner.  Mix in veggies and spices and stir for 30 seconds before removing from heat.  Remove from heat, toss in your ’shrooms and onions, serve and enjoy!
